4 egg yolks
1 Tbsp lemon juice
1/2 c. melted butter
salt to taste
cayenne pepper to taste

Mix egg yolks and lemon juice vigorously in a stainless steel bowl. Place bowl over simmering pan of water, whisk rapidly. Slowly drizzle in melted butter. Add salt and cayenne pepper.
