2 c Fresh Strawberries
3 1/8 c All-purpose Flour
1 /12 c Sugar
1 tbsp Ground Cinnamon
1 tbsp Salt
1 tbsp Baking Soda
1 1/4 c Vegetable, Canola or Coconut Oil
4 Eggs beaten
Chopped Pecans Optional

Preheat oven to 350 degrees. Butter and flour two 9x5 loaf pans or two 8 in round cake pans
Slice strawberries, sprinkle with sugar and set aside while preparing the batter.

Combine, flour, sugar, cinnamon, salt and baking soda in a large bowl; mix well. Blend oil and eggs into strawberries. Add strawberry mixture to flour mixture. Combine until dry ingredients are just moistened. Do not over mix. Stir in pecans.

Bake for 45-50 min. until surface is golden and a tester stick inserted in the middle of each loaf or round comes out clean. Let cool on wire rack until pans are cool enough to touch and turn break out and cool or slice and enjoy.
