4 boneless, skinless chicken breasts
1 (19 oz) can pineapple chunks
2 T cornstarch
1/2 tsp salt
1/3 c cider vinegar
1/4 c sugar
1 T soy sauce
2 med. carrots
1 1/2 c fresh, sliced mushrooms
1 green pepper, cut in strips
1/2 onion. thinly sliced

Cut chicken in 1" cubes. Drain juice from pineapple into large skillet. Reserve pineapple. Blend cornstarch, salt & vinegar into pineapple juice. Cook until sauce is thickened. Add sugar, soy sauce, pineapple, chicken cubes and carrots. Cook & stir over med. heat until chicken is cooked, about 10 mins. Add mushrooms, green peppers & onions. Cook until veggies are tender, but still crispy. Serve over rice.
