1 Pound (500 g) Boneless Skinless Chicken Breast Cutlets
1/4 Cup (60 ml) Balsamic Vinegar or Red Wine Vinegar
3 Tbsp. (45 ml) Olive Oil
1 Garlic Clove, Minced
1/4 Tsp. (1 ml) Each Salt and Pepper
6 Cups (1.5 L) Baby Greens
8 x 1/2 inch Bocconcini Cheese Balls, Sliced (or 4 oz Canadian Mozzarella Cheese)
4 Medium Tomatoes, Thinly Sliced
1/4 Cup (60 ml) Fresh Basil, Thinly Sliced

1 - Preheat barbecue grill to medium-high
2 - In a measuring cup or bowl, whisk together vinegar, oil, garlic, salt and pepper.
3 - Place chicken in a shallow dish; pour in 2 tbsp (30 ml) of the dressing and stir to coat evenly. Place chicken on grill, cover and grill for about 4 minutes or until white around the edges and bottoms are browned; flip over, cover and grill for 2 to 4 minutes or until no longer pink inside. Transfer to cutting board; let rest for 5 minutes.
4 - Meanwhile, in a large bowl, toss greens with half the remaining dressing, arrange on serving plates. Arrange cheese and tomato slices alternating in a half-circle on top of greens.
Cut chicken into slices and arrange in the center of the circle. Drizzle evenly with remaining dressing and sprinkle with basil.
