2 Lbs. Ground Sausage
2 T. Minced Garlic
1/2 Small Onion, diced
1 Frozen chopped spinach (thawed)
8 Oz. Softened Cream Cheese
1 Small Can of Chopped Mexican Chilies
1 Small Can of Mushrooms
12 Well-beaten Eggs (season with salt and pepper)
2 Tbsp. Hellmann'sŪ Mayonnaise‎
1 C. Shredded Cheese (Cheddar or Mexican blend)

Preheat oven to 350°. Spray a 9 x 13 pan with non-stick cooking spray. Brown sausage, garlic and onion and drain excess grease. Add chilies. Press sausage mixture into the bottom of pan. Break cream cheese into pieces and evenly distribute on top of sausage. Mix spinach and mayo into eggs. Pour eggs, mayo and spinach over the sausage mixture. Add shredded cheese to the top.

Bake for 25 minutes, until eggs are just set. Allow to cool for about 5 minutes before cutting
