1 1/2 lbs sweet potatoes, peeled and cut into 3/4" chunks (about 4 cups)
1 1/2 lbs red potatoes, peeled and cut into 3/4" chunks (about 4 cups)
1/3c sweet vinegar and oil salad dressing
4 hard cooked eggs
3/4c diced celery
1/2c diced red bell pepper
1/4c diced onion
1c mayo
1/2c sour cream
1 1/2tsp horseradish
1/4tsp each salt and pepper

Directions:
Directions:
Bring potatoes in water to boil over medium to high heat; cook until tender, about 7-8 minutes. In a large bowl, whisk vinegar, horseradish and salt and pepper. Drain potatoes and add to vinegar mixture, gently stir to coat. Let cool. Mix mayo and sour cream together, add all other ingredients. Gently stir in cooled potato mixture. Serve immediately or cover and refrigerate.
