2 c. all-purpose flour
2 c. masa harina
2 Tbsp. sugar
1 1/2 tsp. salt
2 tsp. (or 1 package) yeast

6 Tbsp. butter, melted
2 large eggs, beaten

Directions:
Combine flour, masa, sugar, salt, and yeast in a large bowl, stirring with a whisk.

Whisk together milk, butter, and both eggs. Add them to the dry ingredients. Stir together with a wooden spoon 1 minute or until smooth.

Coat a 13x9 baking pan with cooking oil spray. Spread dough into the pan, cover with plastic wrap or foil and let rise in a warm place, 1 hour or until doubled in size (we often cut this short).

Preheat oven to 375º.

Remove cover from dough. Bake bread at 375º for 25 minutes or until light golden brown. It should spring back when touched lightly in the center. Cool in the pan for at least 5 minutes, but serve warm.

We like this for many purposes, but especially with the chicken and hominy stew called chupe de pollo con chipotle which is also in this cookbook.
