1 1/2 c sifted all purpose flour
1 c sugar
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
2/3 c salad oil
2 eggs
1 c finely grated raw carrot
1/2 c crushed pineapple with juice
(stir in can before measuring)
1 tsp vanilla

Directions:
Directions:
Preheat oven to 325º. Line 24 muffin tins with liners. Sift flour, sugar, baking powder, soda, cinnamon & salt together in large bowl. Add oil, eggs, carrot, pineapple & vanilla. Blend at low speed till ingredients are moist, then beat 2 minutes at medium speed. Spoon into muffing tins till half full. Bake about 25 minutes or until tops springs back when touched. Enjoy

Although my mom, Ruth Young (Schwab) had many health issues in her life, she never complained. We had to place her in Park Manor Personal Care Home after she broke her hip. One day I brought her & her roommate, Eleanor Head, a couple of these pineapple and carrot muffins. We started talking and discovered Eleanor's brother was Howard Pomrenke. To our surprise, Eleanor started talking about some of the Schwab family that she grew up with about 75 years ago. Of course, Alice was her sister-in-law. Then, to Mom's great surprise, she said she dated Reinhold Schwab. WOW! I explained that he was my father. I asked her how long she dated him & her reply was "only a couple of times because she really didn't care for him". Mom was stunned, and replied that Reinhold was the most wonderful, kind, clean-cut & handsome man she ever knew. I told Mom not to be upset because if Eleanor had liked him, I might not be here today. Mom did not like my joke, and we never talked to Eleanor about my Dad again. It certainly is a small world!
