1 large can salmon + juice
2 large eggs
2 T. chopped onion
1/4 cup plain flour
1 T. cornmeal
1/2 t. baking powder
1/2 t. salt
Oil for frying

Directions:
Directions:
Mix salmon to remove all the chunks. Beat eggs and add to salmon. Mix together flour, corn meal, baking powder and salt. Add flour mixture and onions to salmon.
Heat oil in skillet until hot. Spoon rounded tablespoon of salmon mixture into hot grease, using a knife to push salmon into grease. Brown well on both sides (about four minutes per side). Drain on paper towels.
