1 refrigerated pie crust (from 15-ounce box), softened as directed on box
4 eggs
1 c. half-and-half
2 c. chicken, cooked
1 1/2 c. broken tortilla chips
2 c. Monterey Jack cheese, grated
1 c. cheddar cheese
1 c. chunky salsa with cilantro
1 (15-oz.) can black beans, drained
½ tsp. salt
½ tsp. pepper
Sour cream and salsa (optional)

Preheat oven to 350º F. Place pie crust in a 9-inch pie pan as directed on box for a one-crust filled pie.

In a medium bowl, beat eggs with wire whisk until blended. Beat in half-and-half. Stir in chicken, chips, cheeses, salsa, black beans and salt. Pour into crust-lined pan. Sprinkle pepper over top of filling.

Bake 55 to 65 minutes or until crust is a light golden brown and knife inserted into the center comes out clean. Top with sour cream and salsa.
