3 tablespoons butter
2-3 medium white onions, chopped
2 large carrots, chopped
2 cloves garlic, minced
1 cup water
3 cans (15 oz each) diced tomatoes
2 cups half 'n half (or 2 % milk)
1 cup fresh basil, chopped
salt and pepper

Directions:
Directions:
In a large pot, melt butter over medium heat. Add onions, carrots, and garlic. Cook 5 minutes. Add water, tomatoes, salt and pepper. Cook uncovered over medium heat for 40 minutes, stirring occasionally. Cool slightly. Blend in blender (or use immersion blender) until smooth. Stir in (warmed) half n half. Sprinkle with basil and blend again until pureed. Reheat.
