2-C cooked squash
3/4-C butter, melted
2 eggs
1-tsp salt
1/2-tsp black pepper
1-C onion, chopped
1-C shredded cheddar cheese
1-C evaporated milk
2-C Ritz crackers, crushed.
1 stick melted butter for topping

Directions:
Directions:
Mash cooked squash.

Add all other ingredients and mix well. Pour into a sprayed or greased
9 x 12 x 2 casserole dish. Sprinkle crushed crackers over the top. Drizzle with 1 stick extra melted butter over the top of the crackers

Bake at 375º for about 40-45 minutes.
