6-C of sliced fresh summer squash (should be about 2 12 cups of cooked squash)
1/2-C water
1/2 medium sized grated yellow onion
salt and pepper to tasst
1/2 stick of butter
3 eggs
1-C shredded cheddar cheese
1-C milk
1 sleeve of saltine or Ritz crackers (crushed into crumbs)

Directions:
Directions:
Add squash, water and onion to a large frying pan and cook until tender. Drain cooked squash.

Mix salt, pepper, cheese, melted butter and eggs together in a bowl. Pour all ingredients into a 9x9 casserole dish. Mix cracker crumbs with milk and pour on top.

Bake 30 minutes at 350º until gold and bubbly.

Optional: Add 1/2-C of bell pepper or banana pepper.
