6-8 Chicken pieces, on the bone works best, but boneless chicken thighs will hold up well.
Garlic cloves, peeled
1 can crushed tomatoes
sweet basil
1 small onion, peeled and chopped
olive oil
salt and pepper to taste
red pepper flakes (optional)
spaghetti, cooked al dente

Directions:

Saute chicken pieces in olive oil with garlic, taking care not to burn the garlic.

When browned, add 1 can crushed tomatoes, if this doesn't cover your chicken, add another can. Pureed tomatoes can be substituted if that is what you have on hand.

Add chopped onion, basil, salt and pepper and red pepper flakes to taste

Simmer till chicken is cooked

Cook spaghetti until al dente, drain and toss with tomato gravy.

When serving at the table, you can present it with the spaghetti in a bowl with the chicken arranged on top or the chicken on a separate platter.

Tobey's mother made this without the traditional bell peppers because they did not agree with her. You can always add a few peppers if you like, but Tobey prefers it without as well.
