2 cups Israeli couscous
1 tablespoon olive oil
4 cups chicken broth or 4 cups vegetable broth
A small amount of fresh parsley, chopped
Fresh tarragon (1 Tbs.), chopped
Fresh rosemary (1 Tbs.),chopped
2 ounces lemon juice
Salt & Pepper to taste

Directions:
In a large saucepan, saute Israeli couscous in olive oil over medium heat until fragrant and slightly toasted (about 5 minutes). Add chicken broth to saucepan and bring to a boil. Once boiling, reduce heat and simmer for 10-12 minutes or until most of the liquid is absorbed. Pour couscous into a serving bowl. Add the herbs and the lemon juice and stir to cmbine. Add salt and pepper and adjust if needed.
