Ingredients:  
2 gal cucumber rings (wash, peel, slice and core)
water, to cover
2 c. of pickling lime

1 c. white vinegar
1 tbsp alum
1 small bottle red food color

Syrup:
6 – 8 cinnamon sticks
4 ½ c. water
1 pkg hard red candy (Red Hots)
4 ½ c. white vinegar
15 c. sugar

Day One
2 gal cucumber rings (wash, peel, slice and core)
Cover with water and 2 cups of lime
Soak 24 hours

Day Two
1. Drain & wash in cold water until water is clear.
Soak in cold water 3 hours
2. Drain, then cover with water and add:
1 cup white vinegar
1 tbls Alum
1 small bottle red food color
Simmer for 2 hours
3. Drain and make syrup as follows:
6 – 8 Cinnamon sticks
4 ½ cups water
1 pkg hard red candy (Red Hots)
4 ½ cups white vinegar
15 cups sugar
Bring to a boil, pour over cucumber rings in a tightly covered pot and let stand overnight.

Day three
Drain the syrup and reheat. Pour hot syrup back over cucumber rings in a tightly covered pot and let stand overnight.

Day four
Drain the syrup and reheat. Pour hot syrup back over cucumber rings in a tightly covered pot and let stand overnight.

Day five
Drain the syrup and reheat. Pack the cucumber rings into clean and sterilized jars. Pour hot syrup over rings in the jar. Sealy the jars in a hot water bath canner for 20 minutes.
