2 large carrots, peeled and sliced 1/2" thick
2 large green or red bell peppers cut into chunks
3 cloves minced garlic
4 boneless, skinless chicken breasts
2 teaspoons ground ginger
1 teaspoon salt
1/2 teaspoon pepper
1 container (8 oz) frozen orange juice concentrate, thawed
2 cups mandarin or fresh orange sections

Put carrots, peppers, garlic, chicken, salt, pepper, and ginger in crock pot. Add oranges juice and cook on low for 4 - 6 hours. Serve with hot rice and top with orange pieces.
