2 lbs. (6) medium-sized baking potatoes
1/2 medium-size onion
2 tbsp. flour
2 eggs, beaten
1-1/2 tsp salt
1/4 tsp pepper
1/4 tsp grated nutmeg
2 tbsp. minced parsley
3 or 4 tbsp. butter

Directions:
Directions:
Wash and peel potatoes. Cover with cold water; drain. grate at once and drain water that collects on grated potatoes.

Stir in onion. Add flour, eggs, salt, pepper, nutmeg and parsley. Mix thoroughly.

Heat butter on griddle or in a large fry pan. Place large spoonful's of potato mixture in hot pan; bake 3 or 4 pancakes at one time until brown and crisp on each side, turning with pancake turner. Serve on hot dish.
