1 Dozen small Roma Tomatoes (cut in half lengthwise)

Mix together:
1/4 C olive oil, 10 minced basil leaves, 1 large garlic clove chopped
salt and pepper

Directions:
Directions:
Spray cooking oil on a cookie sheet. Place tomatoes cut side up and add 1 tsp of the mixture to each.

Bake at 250º for approximately 3 hrs. depending on the size of the tomatoes.
Check often to see if they reduce in size and are losing moisture but not burning. That is how you will know they are done. Just the essence of the tomato remains.
Enjoy alone or on crusty bread, in salad or on pizza!
