6 salmon fillets (4 oz each)
Chicken broth
2 cups dry white wine (see note)
2 cups water
Dill weed
Salt and pepper
2 bay leaves
1 rib celery, sliced
CUCUMBER DILL SAUCE
1/3 cup peeled, seeded finely chopped cucumber
1/3 cup sour cream
1/3 cup plain yogurt
2 teaspoons chopped dill
1 teaspoon Dijon mustard

Directions:
Directions:
Put enough chicken broth in pan to poach salmon. To the broth add wine, water, dill weed, salt and pepper, bay leaves and celery. Cook about 10 minutes until fish is flaky.
Combine remaining ingredients for dill sauce. When ready to serve, spoon sauce over each fillet.
