2 pkg breakfast sausages
2 cans peas, drained
Tiny carrots, chopped into small pieces
2 cans tomato soup

Directions:

1. Brown the sausages lightly, if desired.

2. Take out a large casserole dish. (I use a small roaster, because I want to have lots.)

3. Drain the peas and add the chopped carrots and peas into the bottom of the roaster.

4. Cover the pea and carrot mixture with the sausages.

5. Top with 2 cans tomato soup.

6. Cover with a lid and bake in a 350º oven for 1½ hours.

7. Remove lid for the last 20 minutes of baking.

This is another family favourite! Mum served this frequently. She would always have sausage dish in the oven when I came to Edmonton for a visit. This is another easy dish to prepare, but it is simply delicious!

Joshua hated vegetables as a child, and this was one of the ways I could trick him into consuming some. Even today, I sometimes make sausage dish for him, so that I know that he eats some vegetables on occasion. Again, make lots, because it is great the next day as well.
