12 oz. can SPAM
2-1 lb. cans pork and beans
1/2 cup catsup
1/2 cup water
3/4 cup flour
1 tbsp. mustard
2/3 cup corn meal
1 tbsp. sugar
1-1/2 tsp. baking powder
1 tsp. salt
1 egg
2/3 cup milk
1/4 cup shortening , melted
1/3 cup onion, chopped
Directions:
Directions:
Cut Spam lengthwise into 1/4 slices; set aside two slices. Cut remaining slices into bite size pieces. Combine Spam pieces, beans, catsup, water and mustard into 12x8-inch dish. Next combine flour, corn meal, sugar, baking powder, and salt in mixing bowl. Add egg, milk, shortening, and onion all at once, stir just to combine. Spoon around edge of casserole dish. Bake at 400º for 35-40 minutes.
