2 T. Olive Oil
4 Garlic Cloves (finely chopped)
2 Eggs
1 Handful Parsley (chopped)
4 oz. Pancetta ( I use Bacon) (cut into small pieces)
1 cup Parmesan Cheese (grated)
Black Pepper

Directions:
Directions:
1. To insure the proper timing, cook the pasta according to package directions.

2. While preparing the carbonara sauce, and reserve some of the pasta water after cooking is complete.

3. Place the olive oil in a skillet and brown the bacon until all the fat renders out.

4. Add the garlic, and cook until softened.

5. When the pasta is finished, add it to the skillet and coat it with the garlic and bacon fat.

6. In a separate bowl, whisk the eggs and cheese together thoroughly, making sure mixture doesn't clump.

7. Remove skillet from burner, and add the egg and cheese mixture, whisking until the eggs thicken without scrambling.

8. If sauce is too thick or too sparse, add some reserved pasta water gradually until the consistency is what you want.

9. taste the pasta for seasoning, add salt and pepper if desired.

10. Garnish with chopped parsley and grated Parmesan cheese.
