1 cup Arborio rice (do not use quick cooking or instant)
Chicken or beef broth (varies 6-8 cups)
2 large eggs
½ cup grated parmesan, romano or locatelli cheese
1 tbsp dried parsley
¼ tsp black pepper
¼ tsp salt
1 tsp garlic powder
½ cup shredded mozzarella
1 ½ cups seasoned breadcrumbs

Cook Arborio rice per package instructions to make 1 cup of cooked rice using the broth in place of water.

As the rice cooks, in a medium bowl, whisk together eggs, grated cheese, parsley, garlic powder, pepper, and salt. Cover and refrigerate.

When rice is cooked, transfer to a medium bowl and place in refrigerator to cool for 1-2 hours.

Remove rice and egg mixture from refrigerator. Combine rice slowly into the egg mixture making sure to coat rice. Gently fold in shredded mozzarella.

Line 2 cookie pans with parchment paper and spray liberally with PAM. Line up the rice mixture, followed by a small bowl of breadcrumbs, piled up, and the cookie pan.

Wet your hands slightly, this will make forming the balls easier. You may have to repeat this process periodically throughout the process. Form balls, the size of or a little smaller than a ping pong ball, roll in the breadcrumbs and place on parchment lined cookie pan. When pan is full, take PAM and spray each ball once.

Cook for 20 minutes, turning after 10 minutes at 400º.

Instead of baking, if you are really old school, you may want to fry these. Use 2 cups of olive oil and a deep fryer or deep skillet with temp set at 350º. Turn as needed to brown evenly and drain on paper towels.

Also, you can add some ground beef, peas or tomato sauce to the egg mixture for optional flavors.
