1 c. butter (softened)
1 c. sugar
1 tsp baking soda
1 tsp vanilla (or more if you want extra flavor)
1/2 tsp salt
1 egg
3 c. flour

Directions:
Directions:
Preheat oven to 425º.
Combine everything but the flour and mix until creamy. Add flour one cup at a time. The dough should end up stiff and the last of the flour will probably need to be mixed in by hand.
Roll out on floured surface to about 1/2 inch thick. Cut out with cookie cutter.
Bake for 7 minutes. They will look "not quite done" when you take them out. Leave them on the cookie sheet for a while to finish baking.

Gram always told me that if you don't have what you need to make sugar cookies, then your kitchen must be really empty.

You can roll these thinner if you want, and you can bake them longer, if you want them to be crispy. We like them soft and just barely cooked.
