1/2 cup onion, chopped
4 tbsp. butter
1 1/2 lbs. mushrooms, sliced
1/2 cup white wine
4 large potatoes, peeled and chopped
1 qt. chicken stock
1 1/2 cups half & half
1 cup whipping cream
salt, pepper and nutmeg to taste

Directions:
In a saucepan, cook onions in butter until tender. Add the mushrooms and wine; cook until softened. Add potatoes and stock; simmer, covered, until potatoes are very soft, about 30 minutes. Cool slightly. Puree cooled mixture in a blender. Return mixture to the saucepan. Add half & half, cream and seasonings; heat through. Do not boil.

This soup is perfect in the winter; so rich and creamy. When I make it, I put it in the blender, but not until pureed. I like mine more chunky. You can use different types of mushrooms, but I am traditional and use ordinary white mushrooms. I like the fact that you don't add any additional thickeners to the soup, the potatoes are enough to give it a great, creamy consistency.
