2 whole grain English muffins
2 tablespoons butter, melted
1 tomato, chopped
1 garlic clove, minced
Salt & pepper
Fresh spinach, roughly chopped
Chopped Red Pepper
Sliced mushrooms, if desired
3 whole eggs and 1 egg white
Olive oil
Small block of Gruyere cheese, grated

Directions:
Directions:
Sauté tomato, garlic, red pepper, salt & pepper and mushrooms in olive oil until veggies are tender. Separate the English muffin into four halves; place in an 8 inch square baking dish sprayed with non-stick cooking spray. Drizzle with melted butter. Top with tomato mixture; mound with desired amount of spinach.

Break eggs into a small bowl and whisk. Pour over English Muffins. Top with desired amount of grated Gruyere cheese. Bake, uncovered, at 350 for 30 minutes.

*Can also add cooked, chopped turkey bacon if desired
