2 sticks (1 cup) butter
1 cup light brown sugar, packed
1/3 cup white granulated sugar
2 eggs
2 to 3 tsp. real vanilla extract (I use 3)
1 and ½ cups all-purpose flour (I use unbleached)
1 tsp. baking soda
½ tsp. salt
1 tsp. ground cinnamon
1 (10 oz.) pkg. Hershey’s cinnamon chips (in baking aisle by chocolate chips)
2 and ½ cup quick cooking (1 minute) oatmeal
(I use 1 cup regular old fashioned oatmeal, and 1 and ½ cups quick--1 minute—oatmeal. It gives more substance but is not as stiff and dry a dough.)
¾ cup raisins or walnuts, chopped---optional (I use neither.)

Preheat oven to 375 degrees. Blend butter and sugars until creamy. Add eggs and vanilla. Beat well. Combine flour, salt, baking soda, and cinnamon. Add to flour mixture---add cinnamon chips before mixing. Add oatmeal and blend until all is combined.
Drop by rounded tablespoonsful on UNGREASED cookie sheet. Bake 11-13 minutes or until lightly browned. DO NOT OVERBAKE or they will be hard and not so chewy. Leave on pan 1 minute before removing to rack. When cookies are cooled, drizzle white chocolate mixture over each cookie (optional).

Optional: White chocolate drizzle. In a glass measuring cup, place about 3/4 cup white chocolate chips and a little more than 1 T. shortening. Heat in microwave for about 45 seconds. Stir with fork, smashing lumps. If necessary, heat for more time in 15 second intervals –keep the fork out of the microwave!(add more shortening if you need it) until it is melted and drizzles off the tines of the fork. Drizzle white chocolate over cooled cookies. Let sit to allow white chocolate to set before packing for storage. Store in airtight container.
