1 cup yellow cornmeal
2 eggs, beaten
1/2 tsp. baking soda
3/4 tsp. salt
1 can (#303) cream style corn
1/2 cup bacon drippings

1-1/2 lbs. ground meat
1 large onion

1/2 lb. grated longhorn cheese
3 canned jalapeno peppers, chopped real fine

Directions:
Directions:
Mix together first 6 ingredients, and set aside. Next brown and cook ground meat and onion together. Drain on paper towel and set aside. Last, grease a large black iron skillet and layer: 1st-thin layer of meat and onions; 2nd-half of cheese and jalapeno; 3rd-about half of batter. Repeat all layers. Bake at 350º for 45 minutes. Freezes well.
