Ribeye roast (5 - 8 lbs.)
2 Tbsp. Worcestershire sauce
1 ½ tsp. garlic powder
2 Tbsp. sea salt
1 tsp. black pepper
½ tsp. white pepper
1 ½ tsp. thyme leaves

Directions:
Directions:
Place roast on a roasting rack in a large, shallow pan, fat-side up. Poke fat at 1-inch intervals with a fork. Rub top and side with Worcestershire sauce and let roast sit at room temperature for 1 hour.

Mix remaining seasonings and rub into fat. Let stand at room temperature for approximately 2 more hours.

Heat oven to 350º. Roast uncovered for 2+ hours until internal temperature reaches 10° below desired doneness. Remove from oven, cover loosely with aluminum foil, and let sit for approximately 15 minutes. The roast will continue to cook as it sits.

Serve when the internal temperature reaches 130° for rare, 140° for medium, or 155° for medium-well.
