2 cups all purpose flour
2 tsp. Baking soda
1/2 tsp. Salt
2 tsp. Ground cinnamon
3 large eggs
2 cups sugar
3/4 cup vegetable oil
3/4 cup buttermilk
2 tsp. Vanilla extract
2 cups grated carrots
1 (8 oz) can crushed pineapple drained
1 cup flaked coconut
1 cup chopped pecans

Directions:

Grease 3 9 inch round cake pans
Stir first 4 ingredients together. Beat next five until smooth.
Add flour mixture, beating at low speed Until blended.
Fold in remaining 4 ingredients
Pour batter into pans. Approx. 2 cups per pan
Bake 350コ for 25-30 min.
Cool for about 10 min and turn out on wire rack to cool.
Frost with cream cheese frosting.
