1/2 cup margarine
1/2 cup shortening
1 cup Wesson Oil
1 cup powdered sugar
1 cup white sugar
2 eggs
4 cups flour + 4 tbsp.
1/2 tsp. salt, and 1tsp. soda
1 tsp. Mexican or regular vanilla
1/2 tsp. cream of tartar

Directions:
Beat together margarine, shortening, oil, sugars, and eggs. Add the flour, soda, cream of tartar and salt and vanilla. Mix very well. Dough is soft so you may want to put in the refrigerator for 15 to 20 minutes. Make dough into walnut size balls and roll in sugar then place on an ungreased cookie sheet. Flatten with a glass buttered on the bottom and than dipped in sugar. Bake at 350º for 10 to 12 minutes. This is a very large batch and can be easily cut in half and they freeze very well. My note says dough is soft but it will be ok

The secret to these is using Mexican vanilla. I am sure they are very good with regular vanilla but there is just a little something extra about the Mexican vanilla. You could make smaller at Christmas and put colored sugar on them or frost .
