Hummingbird Cake Recipe

2 cups flour
1 1/3 cups sugar
2/3 tsp baking soda
2/3 tsp ground cinnamon
2/3 tsp salt
2 eggs, beaten
1 cups vegetable oil
1 tsp vanilla
1 5 1/2 oz. Can crushed pineapple, undrained
1 1/3 cups chopped nuts
1 1/3 cups chopped bananas

Frosting:

8 oz cream cheese, at room temperature
1/2 cup( one stick) unsalted butter, at room temperature
1 box( 1 pound) confectioners' sugar
1 tsp. Vanilla

Directions:
Preheat oven to 350 °. Grease two 9 inch round cake pans. Line bottoms with waxed paper. Grease paper. Dust inside of pans with flour.
(Note: I have also made this in a 9x13 pan)

Combine flour, sugar baking soda, cinnamon and salt in a large bowl. Stir in beaten eggs and oil until well blended. Do not over mix!! Stir in vanilla, pineapple, half the nuts and bananas just to combine. Spoon into prepared pans. Bake for 25-30 min. ( adjust baking time for larger pan) until toothpick inserted in the center comes out clean. Cool cakes in pans on wire rack for10 min. Remove cakes from pans and cool completely on racks.

Prepare frosting: Beat together cream cheese and butter until smooth. Beat in powdered sugar until light and fluffy. Add vanilla and beat until blended. Frost cake. Garnish with remaining nuts.

This is a yummy cake. My co-worker from school gave me the recipe. She would make it every year for another co-worker's birthday and we would always try to convince the kids that it really was made from hummingbirds!!!
