8 oz. soba noodles
2 Tbsp. peanut oil
4 green onions, chopped
2 cloves garlic, minced
1 tsp. fresh ginger, minced
8 oz. ground beef
2 Tbsp. soy sauce
2 Tbsp. oyster sauce
16 cherry tomatoes, halved
1/4 lb. snow peas
2 Tbsp. fresh basil, chopped
salad greens

Directions:

Cook noodles according to package directions, drain. Heat 2 Tbsp. peanut oil in a medium skillet. Add green onions, garlic, and ginger, cook until fragrant. Add ground beef and cook about 4 minutes. Add soy sauce and oyster sauce; tomatoes and snow peas. Cooking, stirring until vegetables soften. Remove from heat; stir in basil.Toss noodles in with mixture. Serve hot or cold over salad greens.

Strip steak can be substituted for the ground beef. For a spicier dish, substitute hoisin sauce for oyster sauce.
