4 Tbsp butter
1 c sugar
3 egg yolks
1/3 c flour
3/4 c milk
1/3 c lemon juice
3 egg whites

icing sugar (dusting the top)

Directions:
Butter a shallow square 2 quart baking dish. Using an electric mixer, beat 4 tbsp butter, 1 cup sugar and 3 egg yolks until light and fluffy - 2minutes.

Mix in 1/3 c flour, 3/4 c milk and 1/3 c lemon juice. In a second bowl, with clean beaters, beat the egg whites until stiff peaks form, 3 minutes. Stir a third of the whites into the lemon mix, then fold in the remaining whites until combined. Transfer to the prepared dish, place it in a roasting pan and add enough boiling water to the pan to cover a third of the dish.

Bake at 400º oven until the top is lightly golden brown, 35-40 minutes. Dust with icing sugar.
