1-1/2 cups UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice (I also use long grain or jasmine rice)
1 boneless, skinless chicken breast, diced
1 pound cajun or Andouille sausage cut into 1/2-inch slices
2 cloves garlic, minced
1 medium onion, chopped
1 bay leaf
3 stalks celery, chopped
1/2 teaspoon pepper
2 cups chicken or vegetable broth
1 cup beef or vegetable broth
1/2 teaspoon paprika
2 tablespoons Worcestershire sauce

Directions:
Directions:
Combine rice, sausage, celery, onion, garlic, both broths, bay leaf, pepper, paprika and Worcestershire sauce in large skillet or Dutch oven.
Bring to a boil. Reduce heat. Cover and simmer 20 minutes.
Add chicken, cover and simmer until chicken is cooked through and liquid is absorbed, about 10 minutes.

This is my favorite Jambalaya recipe. I've tried making it with shrimp too, but the chicken/sausage combo is better.
