Chicken and Rice Recipe

2 C uncooked long grain rice
2 cans cream of chicken soup
3 C chicken stock or broth
Cut up chicken pieces (I use the whole cut up fryer)

Preheat oven 350°
Spray a 10x13 baking pan with nonstick spray. Pour the uncooked, dry rice into the baking pan. In a mixing bowl, or saucepan, whisk the cream soup and broth together until there is no lumps. You can add black pepper, salt or any other seasonings you like to the broth/soup mixture. Pour it into the baking pan. At this point you could add diced onion or garlic or whatever you like. Wash the chicken, season it with season salts (I use Tony's) then lay the chicken on the rice/soup mixture in the baking pan. Bake about 1½-2 hours ... until the chicken is done and you will see the rice puffed up around it (cooked).
