1 cup Whole Wheat 3-Cheese Tortellini Pasta
1 6 oz. can Honey Boy Skinless Boneless Pink Salmon
1/4 cup green bell pepper, chopped
1/4 cup red bell pepper, chopped
1/4 cup orange or yellow bell pepper, chopped
1/4 cup celery, chopped
1/4 cup seedless English cucumber, chopped
1 tablespoon red onion, chopped
2 tablespoons green salad olives, chopped
2 tablespoons parsley, chopped
1 teaspoon capers
8 Kalamata olives, quartered
2 tablespoons Simply Dressed Greek Feta dressing
2 small canned artichoke hearts, quartered
2 hard boiled eggs, quartered
10 grape tomatoes, halved

Directions:
Prepare tortellini according to package directions. Reserve and Chill 1 cup overnight. Combine first 12 ingredients with 2 tablespoons Simply Dressed Greek Feta dressing. Season to taste with freshly ground black pepper, dill, and salt if desired. Serve on a bed of lettuce (your choice). Garnish with grape tomatoes, artichoke hearts, and egg.
