Ingredients:  
1 tsp ground cumin
1 Tbsp oregano
3 bay leaves
3-4 chipotle chiles in adobo (pureed with water)
2 ½ lbs pork, cut into small chunks (I use chops and put the bones in, too)
1 large onion, diced
6 garlic cloves, minced
4 cups chicken broth
1 Tbsp kosher salt or more to taste (depending how salty the broth is)
2 (25 oz cans) hominy, including the liquid

Directions:

Combine all of the ingredients in the crockpot and cook on high 4-6 hours until the meat is tender. Add salt and more chipotle chiles if needed. Remove bones and bay leaves before serving.
