4 lbs. hamburger
2 large onions
1 head cabbage
salt and pepper to taste

DOUGH
9 cups flour
3 pkg. yeast
6 tbsp. butter
3 cups hot water
3 eggs

Canola Oil ( about 3 inches in bottom of large kettle)

Directions:

1. Brown hamburger in large pan.
2. Finely chop onion. Cut up cabbage and add to hamburger.
3. Salt and pepper to taste.
4. Let simmer on low heat for 2 hrs.
5. Let mixture cool.
6. Mix flour and yeast well.
7. Add eggs, melted butter and hot water (120 to 130 degrees)
8. Mix well
9. Knead dough 5 minutes until smooth on floured surface.
10. Cover dough and let rise for 1 hour or until doubled in size.
11. Rollout 6 inch circles on floured surfaces.
12. Fill half circle with meat mixture.
13. Fold over and seal edges together.
14. Set aside to let dough rise and continue to make next strudel.
15. Heat oil in pan large enough to fry 2 strudels, test oil
by using pinch of dough, if it rises to top immediately oil
Is ready to fry.
16. When both sides are brown, remove from oil and drain.

This is a labor intensive project. I always prepare the meat one day and complete the rolling , filling and frying the next day. How our sweet Mother did it all by her self, I'll never know. She was truly Super Mom.

I usually do this for the masses, once or twice a year. In Florida for Rita's family and in Topeka for Chris's family. We double the recipe, where Rita's sons and grandkids help. I roll the dough, 2 or 3 fill, and Rita fries. In Topeka, I roll and Jessie fills using a round dough press. We can do 40 to 45 an hour. I told her we could start a business.
