3 lb. Pork Shoulder, boneless, skin and excess fat removed
1 onion, chopped
1/2 c. Chicken broth or water
2 c. BBQ sauce - Sweet Baby Rays
2 Tbs. Mustard
2 Tbs. Honey
1 Tbs. Soy Sauce
salt and pepper to taste

optional: liquid smoke to taste

Trim pork of excess fat, Scatter onion over bottom of slow cooker and place port on top. Add broth or water, cover and cook on low until very tender. Approximately 8 hrs.

Remove meat, and let cool. Pull meat to shreds removing all gristle and fat.

Remove liquid from slow cooker. Remove oil and discard. Strain the cooking liquid. Add back in onion and bits of pork. Simmer on medium reducing liquids to a syrup. Return syrup and meat to slow cooker and add remaining ingredients.
