2 1/2 cups flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 1/4 cups packed brown sugar
1/2 cup oil
1 egg
1 tsp. vanilla extract
1 cup buttermilk
1 1/2 cups diced fresh rhubarb or 2 cups frozen chopped rhubarb
1/2 cup black walnuts or nuts of your choice
1tbsp. melted butter
1/3 cup of white sugar
1tsp ground cinnamom

PREHEAT OVER TO 350 DEGREES

1. Grease muffin pans or line with paper cups
2. In a bowl stir together flour, baking soda, baking
powder and salt. In a separate bowl, beat brown
sugar, oil, egg, vanilla and buttermilk with an
electric mixer until smooth. Pour in dry ingredients and
mix by hand until blended. Spoon batter into prepared
pans filling cups almost to the top.
3. In a small bowl stir together melted butter, white sugar
and cinnamon. Sprinkle about 1 tsp. of this mixture on
top of each muffin.
4. Bake until tops of muffin spring back when lightly
pressed, 25 to 35 minutes.
