1 pkg dry yeast
3-31/2 C unsifted flour, divided
4 t sugar
1 1/2 t salt
2 T soft margarine
1 1/4 C very hot tap water
corn meal
1 egg white
1 T water

Directions:
In large bowl thoroughly mix 1 C flour, sugar, salt and active yeast. Add soft margarine. Gradually add very hot tap water to dry ingredients and beat 2 minutes at medium speed. Scrape bowl occasionally, Add 1 C flour or enough to make a thick batter. Beat at high speed for 2 minutes, scraping bowl occasionally. Stir in enough additional flour to make a soft dough. Cover bowl tightly with plastic wrap or aluminum foil and let stand 45 minutes. Stir down dough and turn out onto a heavily floured board. With floured hands mold into an oblong, 15 inches long. Taper ends. Sprinkle a baking sheet with corn meal. Carefully place dough on baking sheet. Cover and let rise in a warm place, free from draft, until doubled in bulk, about 40 minutes. Heat oven to 400º. With a sharp knife make 5 diagonal cuts on top of loaf. Bake 25 minutes. Brush loaf with combined beaten egg white and cold water. Return to oven and bake 15 minutes longer, or until done. Remove from baking sheet and cool on wire rack
