3 egg whites
1 tsp. vanilla
1 cup sugar
1 tbsp. lemon juice
Filling:
3 egg yolks
1 juiced lemon
1/2 cup sugar
1 tsp. vanilla
1 cup whipped cream (I think that would 1/2 pint of cream)**

Beat egg whites until stiff: add sugar gradually. Add lemon juice and vanilla. Spread mixture in buttered pie pan building up the sides. Bake an hour at 275º. Turn oven off and let stand in the oven with the door ajar for an hour. Should be very crisp and light in color. Cook filling in a double boiler until thick, add vanilla. ( I just cook in a pan on low heat.) Let cool. Whip cream, mix filling and cream. Put into pie shell and refrigerate several hours.

This is my all time favorite dessert. Whenever I was asked what I wanted for a special treat this is what I would ask for. Sometime along the way she did use** Cool Whip instead of the cream. That is good also and I think I probably have used both. But the whipping cream is a bit more special.
