3/4 lb. pork tenderloin
1/2 cup peach preserves
2 TB Dijon mustard
2 tsp olive or veg. oil
1/4 tsp. dried Thyme leaves
1/4 tsp salt

Directions:
Directions:
1) Mix all marinade ingredients together and place in a gallon sized freezer bag with the pork tenderloin. Mix well so the pork is coated.
2) Refrigerate from 1 to no more than 8 hours, turning the bag every so often.
3) Cook on a well oiled grill at medium heat for 20-25 min, or until meat thermometer registers at least 160 degrees.
4) Let rest for 10 minutes.
5) Meanwhile, boil remaining glaze in a small saucepan for 1 minute.
6) Slice pork and brush each slice with the glaze.

NOTE: You can bake the pork tenderloin in a 350 degree oven instead. Check the temperature for doneness.
