1/2 box (7 cookies) Safeway Select Thin & Crispy Chocolate Chip Cookies with Sea Salt
2T. Melted Butter
1/2 qt. double fudge mocha ice cream
1/2 c. semi sweet chocolate chips
1/4 c. heavy whipping cream

Line a 12 cup standard muffin pan with muffin cups. Crush cookies in a sealable storage bag. Pour melted butter into bag and mix ingredients around to spread the melted butter throughout the crushed cookies. Press 1 T. of crushed cookie mixture into the bottom of each muffin cup. Scoop 3 T. ice cream into each cookie lined cup. Use the back of a spoon to press the ice cream down into the cup and smooth top as much as possible. Place in freezer to set for a few minutes. Place chocolate chips and cream into microwave safe bowl. Heat on medium for 30 seconds, remove and stir well. Repeat as needed until chocolate chips are fully melted. The mixture will thicken a bit to make a ganache. Remove ice cream cups from freezer and spoon or drizzle about 2 tsp. of ganache over each ice cream cup. Freeze for 5 more minutes to set ganache before serving.
