3 pounds skinless boneless chicken breasts
1 Tbsp dry sherry
1 Tbsp soy sauce
½ tsp salt
2 eggs
¼ c cornstarch
½ tsp powder
2 c oil
1/3 c sugar
1 Tbsp cornstarch
1 c chicken broth
1 Tbsp lemon juice
1 tsp salt
1 lemon sliced
2 Tbsp oil

Directions:
In a large bowl, mix breasts, sherry, soy sauce, salt and mix together. Cover and refrigerate so it marinades 15-20 minutes. In a small bowl, beat eggs, cornstarch, powder to form batter. Heat oil to 350 in wok. Coat chicken with batter and fry in wok until browned. Cut in bite sized pieces; set aside. In a medium bowl mix sugar, cornstarch, chicken broth, lemon juice, salt mix together and add lemon slice Heat oil in wok slowly stir in lemon sauce mix cover and stir til sauce is clear Pour sauce over chicken and serve
