-1.5 peppers, chopped (I used red, yellow, and orange)
-1 large onion
-2 celery ribs, chopped
-4 garlic cloves, minced
-4 tsp canola oil, divided
-1 (14.5 oz) can diced tomatoes, undrained
-1/2 cup chicken broth
-2 tbsp minced fresh oregano or 2 tsp dried oregano
-2 tbsp lemon juice or half a lemon
-2 tbsp minced fresh basil or 1 tsp dried basil
-1/2 tsp salt
-1/4 tsp pepper
-1/4 tsp crushed red pepper flakes
-1 lb boneless skinless chicken breast
-3 scallions, chopped
-fresh parsley

Directions:
Directions:
-In a large saucepan, season (pinch of salt and pepper) and sear chicken breast on medium heat for a few minutes on each side, remove from pan.

-Saute the peppers, onions, celery and garlic in 2 tsp oil until tender. Stir in the tomatoes, broth, oregano, lemon juice, basil, salt, pepper, and red pepper flakes. Add chicken back to the pan to finish cooking. Bring to a boil. Reduce heat; cover and simmer about 10 minutes or until slightly thickened and the flavors are blended. Add scallions and parsley and serve.

I served this over brown rice and with a side of asparagus. It's very yummy and it's filled with fresh flavors.

-I had a lot of leftover veges so I froze the other half for another time.

The vegetable total calories is about 280.
