8 oz. fully cooked bacon
1 package (10 count) biscuits (ie Pilsbury Grands)
8 eggs
1 package (8 oz.) Velveeta Shreds
1/4 c. sour cream
Salt & pepper
Diced green onion
Pico de gallo

Directions:
Preheat oven to 350ºF. Lightly spray a 9 x 13" pan with cooking spray. Quarter biscuits and place at bottom of pan. Layer with cooked bacon and Velveeta Shreds. In a mixing bowl, whish together eggs, sour cream, salt and pepper. Pour over cheese and biscuits. Bake for 30-40 minutes until golden brown. Allow to cool 5-10 minutes before serving. Garnish with onions and pico de gallo (optional).
