Cornish Beef Pastries
2 cups flour
1 tsp salt
2/3 cup shortening
5 to 6 Tbls. cold water
1 med potato
1 lb. round stead cut 1/4 inch cubes.
2/3 cup carrots, chopped in small cubes
1/2 cup chopped onions
1 tsp. salt
1/4 tsp pepper
milk
1 tbls sesame seed

In a large bowl stir together the flour, 1 tsp salt. with pastry blender, cut in shortening until mixture resembles coatse crumbs.
add cold water a tbls. at a time to dry ingredients to form dough. Form a ball. Cover and chill 1 hour.

Meanwhile peel and chop potatoes, carrots, onion with beef, 1 tsp. salt and pepper to taste. Set aside.

Divide dough into 5 portions. On lightly floured surface roll out each portions on a lightly floured surface. Roll out each portion to a 7 inch circle. Place about 2/3 cup filling in the center of each circle. Bring sides of pastry over filling. Pinch edges to seal. Cut slits in pastry for escape of steam. Brush pastry lightly with milk and sprinkle with sesame seed. Carefully transfer pastries to an ungreased baking sheet.
Bake at 375 oven for 35 to 40 minutes or until golden brown.
Make 5, can be doubled.
